Recipe: Authentic Karnataka-Style Bisi Bele Bath

Ingredients: For the Rice and Dal:

  • 1 cup rice
  • ½ cup toor dal (split pigeon peas)
  • 4 cups water
  • 1/4 teaspoon turmeric powder
  • Salt to taste

For the Bisi Bele Bath Powder:

  • 2 tablespoons chana dal (Bengal gram)
  • 1 tablespoon urad dal (black gram)
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon fenugreek seeds
  • 5–6 dried red chilies
  • 1-inch piece cinnamon
  • 4–5 cloves
  • 3–4 cardamom pods
  • 1 tablespoon dry coconut (optional)

For the Vegetables:

  • 1 cup mixed vegetables (carrots, beans, potatoes, peas)
  • 1 small onion, chopped (optional)
  • 2 tablespoons tamarind pulp
  • 2 tablespoons ghee or oil

For Tempering:

  • 1 tablespoon mustard seeds
  • 2–3 dried red chilies
  • A few curry leaves
  • A pinch of asafoetida (hing)
  • Cashews (optional)

Method:

  1. Cook Rice and Dal:

    • Wash the rice and toor dal together, add turmeric powder, salt, and 4 cups of water. Cook in a pressure cooker for 3–4 whistles until soft and mushy. Set aside.
  2. Prepare Bisi Bele Bath Powder:

    • In a dry pan, roast the chana dal, urad dal, coriander seeds, cumin seeds, fenugreek seeds, dried red chilies, cinnamon, cloves, and cardamom until aromatic.
    • Let them cool, then grind them into a fine powder. You can add dry coconut to the mixture, but it’s optional.
  3. Cook the Vegetables:

    • In a pot, boil the mixed vegetables until tender but not mushy. Drain and set aside.
  4. Mix Rice, Dal, and Vegetables:

    • In a large pan, mix the cooked rice and dal with the cooked vegetables. Add tamarind pulp, salt, and 2 cups of water. Stir well and let it simmer for about 10 minutes.
  5. Add the Bisi Bele Bath Powder:

    • Add 2–3 tablespoons of the freshly ground Bisi Bele Bath powder to the simmering mixture. Stir to combine and let it cook for another 5–7 minutes. Adjust the consistency by adding water if needed. It should be like a thick porridge.
  6. Tempering:

    • Heat ghee or oil in a small pan, add mustard seeds and let them splutter. Add dried red chilies, curry leaves, asafoetida, and cashews. Fry for a few seconds and pour this tempering over the Bisi Bele Bath.
  7. Final Touch:

    • Stir everything together, check for salt, and adjust the spices as per your taste.

Serve:

  • Serve hot, garnished with crispy boondi or chips, and a dollop of ghee on top. Bisi Bele Bath is best enjoyed with papad and raita on the side.
